Spanish Rice

Ingredients:

arrow Basmati rice
arrow Water (according to directions)
arrow 1 small Onion, chopped
arrow 1 can Tomatoes
arrow 1 4oz can Diced Green Chiles
arrow Garlic Powder

Directions:

In a pan, sweat the chopped onion. You can use a little water if needed. Once the onions become translucent, add the rice and water. Bring to a boil, and reduce to a simmer. Add the canned tomatoes, green chilies and garlic powder.
Cook according to directions on rice. To cook without extra juice, finish off rice by cooking uncovered a few more minutes using medium- high heat. Watch until all remaining liquid is absorbed or evaporated. You could also reduce your water by 1/2 cup.

Good for post workout as well as a breakfast dish.
